In true Italian style, dishes are designed to share. We take the best ingredients, organic where possible & present them simply & elegantly, with a respect for sustainability. Our smallgoods are selected from artisan producers in Australia & Italy, combined with fruit & vegetables from local farms. All the products used in our kitchen; salts, flours, regional cheeses, grass-fed meats, game & seafood have been sourced based on these values & sustainable farming practices.
Our sharing menu includes dishes that aren’t necessarily on the regular menu which adds an element of surprise to your dining experience. With this Italian foodie journey you get what you get. It’s how things are done at nonna’s house.
Fabio wanted to recreate the culinary ethos of his country: flavoursome, homemade food to be shared amongst friends & family.

Situated on the northern slopes of the Etna volcano, between 650 & 780 metres above sea level, the Girolamo Russo estate was founded in 2005 by Giuseppe
Russo, in memory of his late father.
The family are native of Passopisciaro, one of the key villages at the heart of the rebirth of Etna’s most important grape variety, Nerello Mascalese. The Russos have 15 hectares of vineyards surrounded by olive & hazelnut groves in & around Passopisciaro.
Many of the free-standing bush vines are over 80 years old, surviving in harmony with Etna’s black, mineral-rich volcanic soil.
Giuseppe works the vineyards organically & makes the wines himself. He vinifies each parcel of land separately, seeking out their individual identities in a series of wines that reflect the diverse character of their respective terroir. Read More
